These delicious homemade blueberry bagels taste just like the authentic New York delicacy. Made in less than an hour of prep. time, they're worth a try everyone, including the most novice bakers!
1 1/4 cups of warm water
One sachet of yeast
2 cups of fresh blueberries
2 tbsp of sugar
2 tsp of salt
3 1/5 cups of strong white flour (plain/all purpose is fine too)
A squeeze of maple/date/golden syrup
Pour the yeast & sugar into 1/2 of the warm water. Quickly stir and leave to activate for 5 minutes
Siv the flour into a large & mix in the salt
Toss 1 cup of the blueberries in some flour
Put the other half cup of bluberries in a small pan & simmer in water until the bluberries become 'gloopy'
Pour the water into a well in the large bowl of flour & mix
Add the remaining warm water
Mix in the bluberries from the pan & watch the mixture become blue
Mix in the fresh, floury blueberries into the mixture
Knead the dough for five minutes until it becomes soft & stretchy
Place a kitchen towl over the bowl & leave for 90 minutes in a warm place until the mixture doubles in size
Lightly dust a clean surface with flour & wet your hands. Take out the dough and divde into 14 equal parts
For each piece of dough- roll into a ball, gently press it own & stick a finger through the middle. Gently pull the doughs into rounded bagel shapes.
Whilst the bagels prove, bring a large pot of water to boil. Squeeze & mix in your syrup of choice
Preheat the oven to 190 degrees C & line 2-3 trays with baking paper.
Boil 3-4 bagels at a time, 30 seconds on each side.
Place the boiled bagels on the baking trays & bake for approximately 20 minutes until lightly browned on top.
Allow to cool until room temperature & enjoy toasted with plant-based butter
