Garlic Butter Mushroom Pasta

Ingredients

250g pasta (spaghetti or fettuccine)

2 cups mushrooms (sliced)

3 cloves garlic (minced)

2 tbsp vegan butter or olive oil

1 tbsp soy sauce or tamari

½ cup coconut cream or cashew cream

½ tsp dried thyme

Salt & black pepper to taste

Instructions

1. Cook pasta according to package instructions.

2. In a pan, heat vegan butter, add mushrooms, and sauté until golden.

3. Add garlic, soy sauce, thyme, and stir for 1-2 minutes.

4. Pour in coconut cream, mix well, and toss with cooked pasta.
