Ingredients 2 tbsp olive oil 1 white onion, chopped 500g carrots, chopped 1 tbsp cumin 1 tsp group ginger 1 tsp group coriander 200g natural coyo vegan yoghurt Vegetable stock cube and 500ml water Salt and pepper, to taste Instructions Toss chopped carrots with olive oil, cumin, ginger, coriander and salt and pepper. Roast in the oven at 180 degrees C for 30 minutes or until soft and slightly caramelised. Sauté onion in a large pan in 1 tbsp olive oil.
