3 cloves fresh garlic, minced or crushed
1/4 cup tahini
2 tbsp lemon juice, freshly squeezed
2 tbsp olive oil
2-4 tbsp water, to thin as needed
1/2 tsp salt
Pinch cumin or paprika (optional)
1. In a bowl, whisk together tahini, lemon juice, and olive oil.
2. Add minced garlic and salt, whisk again.
3. Slowly add water, one tablespoon at a time, until you reach your desired consistency (smooth and pourable).
4. Add optional cumin or paprika for extra flavor.
5. Let sit for 5–10 minutes to allow flavours to meld
