1 can (400g) crushed tomatoes
1 cup vegetable broth
1 small onion, chopped
2 cloves garlic, minced
½ cup coconut milk (or any plant-based milk)
1 tsp dried basil (or a handful of fresh basil)
Salt & black pepper to taste
1. Sauté onions and garlic in a pot until softened.
2. Add crushed tomatoes, vegetable broth, and basil. Simmer for 10 minutes.
3. Blend until smooth, stir in coconut milk, and season to taste.
