Kataif noodles with vegan Kaymak

About This Recipe

Inspired by Greek, Palestinian and Turkish dishes, Dr Michal Nahman kindly offered JVS this recipe. Perfect for a sweet, vegan dessert.

Ingredients

Kataif noodles

(found in fridge section in Middle Eastern supermarkets)

Oatly crème fresh for 'Kaymak'

Soft fruit like peaches, apricots or plums

Rose petal syrup

Chopped pistachios

Cold vegan butter

Instructions

1. Split the fruits in half and sear them in a buttered pan or roast in an oven

2. Separate out the strands of kadaif noodles into several small rows or bunches, as if making a thin plait of hair.

3. At the base of each row of noodles, place a small chunk of cold butter, about the size of a small lego block.

4. Roll the noodles around and upward so they make a little roll.

5. Pack the rolls closely into a buttered roasting tin and bake for around 20-30 mins, until toasted brown.

6. As soon as they come out of the oven, pour the rose syrup over them

7. Place in a bowl and accompany with the seared/roasted fruits alongside a dollop of the 'kaimak' (oatly crème fraiche).
