A JVS member kindly gave us his Aunty Stella's delicious ginger cake recipe!
Super easy, soft and sweet.
B'tei avon!
½ cup oil
½ cup sugar
½ warm water
½ cup golden syrup
1 portion of egg replacement
170 g self raising flour
1 ½ tspn cinnamon
1 ½ tspn ground ginger
¼ tspn bicarbonate of soda
1. Heat oven to 350F/160C. Oil and line 2lb loaf tin.
2. Mix oil, syrup and water.
3. Add sugar and beaten egg replacement
4. Sift together flour, cinnamon and ginger.
5. Sift together flour, cinnamon and ginger.
6. Make a well in the middle and add oil mixture. Beat till smooth.
7. Add bicarbonate of soda dissolved in ½ tablespoon hot water.
8. Bake for 45 mins or until cake is springy to the touch.
