Another perfectly sweet dish for you Rosh Hashana dinner table.

2 Tbsp. unsalted butter, for greasing pan
3 large sweet potatoes
(peeled and sliced 1/4 inches thick)
3 large cooking apples
(peeled, cored, and sliced 1/4 inches thick)
Kosher salt and pepper
Thyme (ideally fresh)
1/2 cup of maple syrup
3/4 cup apple cider
1/2 stick (2 ounces) unsalted butter
1. Preheat oven to 350°
2. Grease two large, shallow baking dish with two tbsps of butter. Arrange the sweet potato and apple slices in the dish
3. In a medium saucepan, combine the maple syrup, cider, butter and salt. Simmer over moderate heat for 8 minutes until reduced slightly. Pour the mixture over the slices in each of the baking dishes and cover the dishes securely with foil.
4. Bake in the center of the oven for 50 minutes. Remove the dishes from the oven, uncover and baste the apples and sweet potatoes with the pan juices.
5. Increase the oven temperature to 400° for 25 minutes with the dish towards the top of the oven. Continue baking for about 25 minutes until the sweet potatoes are tender and nicely glazed.
