Purple Cabbage Rolls with Guacamole

Ingredients

8-10 leaves of purple cabbage

2 ripe avocados

1 lime, juiced

2 tablespoons fresh coriander, chopped

1 small jalapeño, seeds removed and finely chopped (optional for heat)

2 green onions, finely chopped

Salt and pepper to taste

Instructions

Prepare the cabbage leaves: Bring a large pot of water to a boil. Carefully remove the leaves from the head of purple cabbage, cutting out the tough stems. Blanch the leaves in the boiling water for about 2 minutes, then transfer to ice water to stop the cooking process.

Make the guacamole: In a bowl, mash the avocados with lime juice, coriander, green onions, jalapeño (optional), and a pinch of salt and pepper.

Assemble the rolls: Lay out each cabbage leaf flat and scoop a spoonful of guacamole onto the centre of each leaf. Roll the cabbage around the filling, folding in the sides as you go.

Serve: Arrange the rolls on a plate, drizzle with extra lime juice and garnish with more green onions.
