Easy Peasy Vegan Garlic Mushrooms
This recipe serves 2 people as a side dish or 1 person if you’re really ravenous! You can easily double or triple the ingredients for more servings. This recipe takes about 10-15 minutes in total:
• Prep time: 5 minutes (washing and chopping mushrooms, mincing garlic)
• Cooking time: 7-10 minutes, to sizzle the mushrooms and all ingredients together
Super quick and easy!
Ingredients
2 cups mushrooms (button or cremini)
2 tbsp vegan butter or olive oil
3 cloves garlic (minced)
1 tbsp soy sauce or tamari
1/2 tsp dried thyme (or your favourite herbs)
Salt & black pepper to taste
Fresh parsley (optional, for garnish)
Instructions

Heat the vegan butter or olive oil in a pan over medium heat.

Add the mushrooms and sauté for 5-7 minutes until they start to soften.

Add the minced garlic, soy sauce, and thyme. Stir well and cook for another 2-3 minutes.

Season with salt and black pepper to taste.

Garnish with fresh parsley and serve warm!
