Thai Flavoured Winter-Warming Soup

This soup will keep you warm throughout the winter months. As well as being really good for you it will fill you up and keep you going.
Ingredients
- 2 tbsp olive oil
- 1 white onion, chopped
- 500g carrots, chopped
- 1 tbsp cumin
- 1 tsp group ginger
- 1 tsp group coriander
- 200g natural coyo vegan yoghurt
- Vegetable stock cube and 500ml water
- Salt and pepper, to taste
Instructions
- Toss chopped carrots with olive oil, cumin, ginger, coriander and salt and pepper. Roast in the oven at 180 degrees C for 30 minutes or until soft and slightly caramelised.
- Sauté onion in a large pan in 1 tbsp olive oil.
- When soft, add the roasted carrots, 500ml veggie stock and 200g natural coyo.
- Simmer for 5 minutes then blend with a hand blender or Vitamix until desired consistency is reached.
