A delightful, authentic spinach and potato curry, which uses homemade curry paste.
Sag Aloo – Spinach and Potato Curry

Ingredients
- 4 medium to large potatoes, cubed
- 250g spinach
- 1 large onion, finely chopped
- Tomato puree
- Curry paste
- Chilli (optional)
- Spices (see recipe for quantities)
Instructions
- Boil potatoes until soft (never too soft)
- Boil spinach until wilted
- Keep the above separate
- Heat 2tbsp oil (medium heat)
- Add ½ tsp turmeric
- Add tsp salt + pepper
- Add ½ tsp black mustard seeds
- Add onion
- Add full quantity of above curry paste
- tsp cumin
- Half a small can of tomato puree
- ¼ can chopped tomatoes
- ½ chilli (or more) optional
- Add potatoes
- Add spinach
- Add 1 tsp garam masala
