Fasolia (Sephardic Green Beans)

Fasolia (sometimes spelt Fasoulia) is a traditional Sephardic dish. It also has roots in Syrian and Lebanese cuisine.
Ingredients
- 450g/1lb green beans
- 1 – 2 cloves garlic (depending on taste), crushed
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 3 large ripe tomatoes
- 1 tablespoon tomato puree
- 120 ml/half cup hot water
- sea salt and freshly ground black pepper, to taste
Instructions
- Prepare the green beans by cutting the tips off and washing. Cut any particularly long beans in half.
- Prepare the tomatoes by placing them whole into a bowl. Cover with boiling water then leave for 30-60 seconds, or until the skins have split. Remove the tomatoes from the water using a fork. When they’re cool enough to handle, peel off the skins, then chop up the tomatoes.
- Fry the onions and garlic in the oil for a few minutes, then add the green beans, tomatoes, tomato puree, salt, pepper and water.
- Simmer covered for 30 minutes, until the beans are tender.
- Serve with rice or crusty bread.
