Apple Cake

A big hit with my two-year old nephew, this apple cake is simple to prepare and delicious!
Ingredients
- 250g self-raising flour
- 1 teaspoon (heaped) bicarbonate of soda
- 1 teaspoon (heaped) cinnamon
- 1/2 teaspoon salt
- 150 g caster sugar
- 350 g apple sauce (6-8 apples cooked in small amount of water and mashed – if they are small use 8 of them, if they are bigger, only use 6.)
- 100 g margarine
- 2 tablespoons golden syrup
- 100 g raisins
Instructions
- Peel the apples and cut into pieces. Simmer them until they’re soft (about 15-20 mins), then mash and allow to cool.
- Cream the margarine and sugar together until soft and creamy-coloured. Add the cooled apple sauce and syrup to this.
- Sift the flour into a separate bowl and add the bicarbonate of soda, cinnamon and salt and mix together.
- Add these dry ingredients to the apple sugar mix and add the raisins.
- Bake in a greased loaf tin at 180°C/350°F/gas mark 4 for about 45 minutes (or less depending on the oven).
