Roast Potatoes with Rosemary |

Rosemary and potatoes go really well together, and these are great served both hot and cold. An extra reason to make this dish is that studies have found rosemary can boost brain performance and mood.
Ingredients
- 1 kg new potatoes
- small bunch rosemary, leaves roughly chopped
- 4 tablespoons extra virgin olive oil
Instructions
- Heat the oven to 200°C or 180°C fan-assisted/400°F or 350°F fan-assisted/gas mark 6.
- Put the potatoes and rosemary in a roasting tin and toss in the olive oil.
- Roast for 40 minutes until tender and crisp.
- Season with sea salt and black pepper.
