Chocolate Chip Muffins |

Serves: Makes 8 muffins
These muffins are best served warm when the chocolate pieces are melted and still gooey.
Ingredients
- 300 ml boiling water
- 50 g creamed coconut
- 225 g self-raising flour
- 1 tablespoon baking powder
- pinch of salt
- 115 g soft light brown sugar
- 45 g cocoa powder
- 60 ml sunflower oil
- 175 g dark chocolate
Instructions
- Preheat the oven to 180°C/350°F/gas mark 4.
- Put the creamed coconut in a bowl and pour bowling water over it. Stir until dissolved then set aside until cool.
- Break up the chocolate into chunks.
- Sift together the baking powder and flour then add the cocoa powder and salt.
- Stir in the sugar.
- Form a well in the centre of the mixture and pour in the dissolved coconut and the sunflower oil. Mix well.
- Add the chocolate.
- Spoon the mixture into 8 muffin cases and place these in a muffin tray so the shapes of the muffins stay in tact.
- Bake for 15 minutes.
- Transfer the muffins to a wire rack to cool just slightly then serve warm.
