About This Recipe

A Spicy Tunisian Sauce that is can be served with crispy aubergine ‘schnitzel’. This recipe was kindly given to us by Dr Michal Nahman, who ran her live cooking show Blessed Hands for JVS.

Ingredients

¼ cup vegetable oil or olive oil

3 tbsp tomato paste

3tbsp paprika

10 cloves of garlic chopped finely

Salt & pepper

1 tbsp crushed caraway seeds

1 tsp chilli flakes/spicy paprika/cayenne

1 tsp sugar/date syrup

1 tbsp cumin

Juice of a lemon (preserved lemons optional)

Small bunch of coriander

2.5 cups boiled water

Instructions

1. Fry the tomato paste in the oil until it darkens a bit (very important step).

2. Add paprika and garlic.

3. Next, add rest of seasonings and salt and pepper.

4. Fry on a low heat a few mins until fragrant and then add the water and cook for about 15-20 mins minimum. You want all the flavours to meld together and deepen, and the sauce to reduce a bit.

5. Finally add the lemon juice and most of the coriander.

6. Once sauce is ready, put on a large serving dish and lay fried aubergines on top. Dress with fresh coriander and serve.
